Unitherm offers a unique end-to-end solution for smoking and pasteurizing hams and turkeys. After cooking and chilling your deli loaves, run them through the Liquid Smoke Applicator. Then, use an Infrared Pasteurizer to simultaneously smoke and brown while also achieving post-process, pre-package pasteurization. Third-party validation studies confirm that our process results in a 3.0 log reduction in Listeria monocytogenes is just 60 seconds, with little or no further chilling required. This system translates into significant yield benefits — just 1-2% loss compared with 6-13% loss in traditional systems.
