We also have a patent pending process for cooking rice in a bag in a Spiral Oven. This process provides 100% yields and offers the same cook-in-bag benefits of sous vide: shelf life extension, no double handling, and precise portions to reduce waste. Processors currently apply this method to cook rice for several uses, including retail sale, foodservice, and to be used as a component of another product, such as salads.
