Vertical Rapid Cruster

Quickly add a crust to your product without the re-occurring cost involved with cryogenics and the inconsistency of a blast cell; all in a relatively small footprint. Maximize slicing efficiency!

  • Increase net slicing yield up to 99.5%.

Pasteurizers

 

Aquaflow Pasteurizer

An in-bag (post package) process, which generally provides a 3-Log reduction in Listeria in about 2 minutes by submerging the products into a steam injected hot water bath. The product will then be immediately chilled to bring the temperature of the product back to under 40° F.

Infrared Pasteurizer

Infrared Pasteurizer is helping to combat the hazards of Listeria and other a pre-package treatment for products from spiral ham to brisket to deli loaves. Provides a quick surface treatment (45 – 60 seconds) on pre-cooked products, killing 99.99% of bacteria present on the surface of the product. Log reduction of 3 or better is common, along with a dramatic increase in the shelf life. The I.R. Pasteurizer has been approved as a method to create “Low Risk” products.

Combination System Pasteurizer

By combining the Infrared Pasteurizer and the Aquaflow, Unitherm clients have seen the best results. The combination of systems cuts residence time in the Aquaflow down to one minute; which consequently means less time in the chiller after, which also means a smaller footprint. Log reduction levels are usually about 4 to 4.5.
